Cheesy Mushroom Parmesan with Air-Fried Polenta

Savor the harmonious combination of savory mushrooms and parmesan cheese served atop perfectly air-fried slices of creamy polenta, creating a delightful fusion of textures and flavors.

Ingredients

  • 4 Tbsp. butter

  • 4 Tbsp. flour

  • 2 C. vegetable broth

  • 3/4 C. heavy cream

  • Salt and pepper

  • Italian seasoning

  • 4 cloves garlic, finely minced

  • 1/3 C. shaved Parmesan cheese

  • 1/3 C. shredded Parmesan cheese

  • 1 tube San Gennaro Polenta, sliced

  • 1/2 C. Adam's Morel Mushrooms, rehydrated and chopped

Directions

  1. Cook polenta in the air fryer at 380° for 18-20 minutes.

  2. Meanwhile, heat butter in a large pan over medium heat. Once melted and sizzling slightly, add garlic and Italian seasoning along with a pinch of salt and pepper. Cook, stirring frequently for 1 minute. Add flour to the pan, whisk until well combined, and continue to stir frequently for 1 minute.

  3. Turn heat to low and slowly pour in broth, whisking as you pour, until well combined. Bring to a gentle simmer over medium heat and let sit for about 2 minutes until it thickens.

  4. Add heavy cream and shredded Parmesan cheese. Whisk until the cheese is melted and the sauce is smooth and creamy. Cook over low heat, stirring frequently, until it reaches your desired consistency.

  5. Remove sauce from heat and cook mushrooms in the pan over medium heat for about 15 minutes or until tender.

  6. Add sauce back into the pan and mix with mushrooms and shaved Parmesan, seasoning to taste with salt and pepper. Pour over polenta or serve as a dip!
