Chinese Sausage and Mushroom Congee

Experience the comforting embrace of this traditional Chinese rice porridge, enriched with the savory notes of Chinese sausage and tender mushrooms, delivering a soothing and nourishing bowl of goodness.

Ingredients

  • 1 C. long-grain white rice, rinsed

  • 7 C. chicken stock

  • 1/2 tsp. salt

  • 1 inch knob of ginger, peeled and sliced thin

  • 3 Kam Yen Jan Chinese Sausages, sliced thin

  • 8 oz. Adam’s Mushrooms, sliced & rehydrated

  • 2 tsp. soy sauce

  • Sliced green onions, for garnish

Directions

  1. In a large pot add stock, rice, salt and ginger. Bring the mixture to a boil, then reduce the heat to a low simmer. Stir occasionally so that the rice doesn't clump or stick at the bottom.

  2. Simmer the congee for about 1 hour or until the congee is thickened and creamy.

  3. While the rice is simmering, heat a large skillet over medium-high heat. Add Kam Yen Jan Chinese Sausage and cook for about 2 minutes or until the sausage begins to release its fat. Gently stir in the mushrooms and soy sauce. Cook for about 2 minutes or until mushrooms are tender. Remove from heat.

  4. When the rice is finished, stir in the mushroom and sausage mixture.

  5. Add salt to taste and green onions. Serve the Kam Yen Jan Chinese Sausage and Mushroom Sticky Rice hot!
