Creamy Pumpkin Pasta

Ingredients

  • 1 package Maestri Pastai pasta

  • 1 Tbsp. Atlas Olive Oil

  • 4 garlic cloves, minced

  • 15 oz. pumpkin puree

  • 1/8 Tsp. ground nutmeg

  • 1/2 C. half and half

  • Salt

  • Ground black pepper

  • Shredded parmesan cheese

Directions

  1. Cook pasta until al dente. Reserve 1 cup of pasta water and drain.

  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook until aromatic, for about 1 minute.

  3. Add pumpkin puree and reserved pasta water, whisking to combine until sauce is fully mixed and glossy. Add half and half and stir to combine. Season with salt, pepper, and nutmeg.

  4. Serve immediately with a sprinkle of parmesan cheese. Enjoy!
