Mushroom and
Chinese Sausage Egg Noodle Stir-Fry

Experience the bold flavors of Chinese cuisine in this hearty stir-fry, where tender egg noodles mingle with savory mushrooms and aromatic Chinese sausage, creating a dish that's both comforting and full of umami goodness.

Ingredients

  • 8 oz. egg noodles

  • 2 eggs

  • 1 Tbsp. mirin

  • 1 Tbsp. chicken bouillon powder

  • 4 Kam Yen Jan Chinese Sausages, sliced

  • 1 C. shiitake mushrooms

  • 1 onion, chopped

  • 2 cloves garlic

  • 1 inch ginger, minced

  • 1 tsp. dark soy sauce

  • 1 Tbsp. Atlas Olive Oil

Directions

  1. Bring a pot of water to a boil and cook noodles according to the package’s directions.

  2. In a bowl, beat eggs with mirin and chicken bouillon powder. Set aside.

  3. Over high heat, cook Kam Yen Jan Chinese Sausage until glistening and slightly browned at the edges, about three minutes. Add the mushrooms and continue cooking on medium-high heat until mushrooms have softened, about 3 minutes. Add dark soy sauce and cook for an additional minute. Remove from the pan and set aside.

  4. Add olive oil, onions, garlic, and ginger to the pan and cook until onions are softened, stirring often.

  5. Drain the pasta - don't rinse! Add to the pan and toss for a couple of minutes to make sure pasta is heated through.

  6. Remove pan from heat and add egg mixture to pasta slowly while stirring constantly. Toss with sausage and mushrooms.

  7. Season with salt and pepper to taste. Serve immediately and enjoy!
