Pasta with Wild Mushroom Sauce

Elevate your pasta game with this luxurious dish, featuring a medley of earthy, wild mushrooms sautéed to perfection and tossed in a velvety sauce, creating a harmonious blend of rustic flavors.

Ingredients

  • 8 oz. Maestri Pastai pasta

  • 1 Tbsp. Atlas Olive Oil

  • 3 cloves garlic, chopped

  • 1 shallot, chopped

  • 1 Tbsp. dried parsley

  • 1/4 C. pine nuts

  • 1 C. Adam's Porcini Mushrooms, rehydrated

  • 1 C. full-fat milk

  • Fresh parsley, for garnish

Directions

  1. Bring a large pan of salted water to the boil and add the pasta. Cook for the time indicated on the package, stirring occasionally. Soak a handful of dried porcini mushroom slices in boiling water for 10-15 minutes.

  2. In a large pan, heat some olive oil, chopped garlic, and a finely diced shallot with a pinch of salt. Sauté over medium heat without letting it brown. Finely chop the soaked mushrooms and add to the pan along with the pine nuts. Turn up the heat and continue cooking for 5-10 minutes, adding a drop more of oil if needed. Turn down the heat and let the flavors combine. Add some dried parsley and a bit of milk. Let thicken for a minute or two.

  3. Drain the pasta and add it to the pan with the mushrooms. Put the pan back onto the heat and stir to combine the flavors and let the pasta absorb some of the sauce. Slacken with more milk if needed. Serve sprinkled with fresh parsley and a drizzle of olive oil.
